Vegetable Stir-Fry
1 tablespoon fresh ginger, minced
1 garlic clove, minced
1 large carrot, thinly sliced
1 red bell pepper, in 1 ½ inch pieces
5 green onions, sliced
1 cup cabbage, sliced
8 water chestnuts, sliced
1 cup broccoli flowerets
¼ pound snow peas
¼ pound bean sprouts
2 tablespoons soy sauce
2 tablespoons peanut oil
3 tablespoons cashew halves
In large skillet or wok heat peanut oil and brown
3T cashew halves; remove. Add ingredients in order listed, cooking a
moment before the next addition. After 6 to 8 minutes, add 2T soy sauce,
cashew halves; toss and serve immediately.
