Thyme
Roasted Potatoes
4 medium potatoes, scrubbed and cut in quarters
1 tablespoon olive oil
1 tablespoon fresh thyme
1/2 teaspoon Kosher salt
Coat potatoes with oil, sprinkle with
thyme and salt. Roast in 400 degree oven for 40 minutes turning often.
Make extras and warm in a skillet for a side with Thursdays dinner.
