Sweet Pepper Sauce with Pasta and
Mixed Grill
2 tablespoons oil
6 large tomatoes, peeled and quartered
4 garlic cloves, minced
1 onion, chopped
4 red bell peppers, peeled and seeded
1/2 cup fresh basil, minced
1 1/2 cups chopped grilled meats
1 pound pene, cooked according to package directions
Heat oil in large skillet; add tomatoes, cloves, onion; cook over high
heat, stirring constantly until most of liquid is gone; add peeled and
seeded red bell peppers. Remove to food processor and pulse 3 or 4 times.
Return to pan, add basil. Combine
1-1/2 cups chopped grilled meats with 1 pound cooked penne and toss
with sauce.
