Preserving The Harvest

Steamed Broccoli
1 pound broccoli, cut into flowerets with short stems
melted butter

Place in steamer over boiling water and steam for 6 to 8 minutes. Remove when tender, pierced with a sharp knife. Toss with melted butter and sprinkle with salt. Put in heated serving dish. This may be cooled and refrigerated and reheated in microwave or over steam. Broccoli is not good if it is old or over cooked. I always cook extra and store it to use in a salad or quiche.
