Spinach, Potato, Herb Timbale
2 cups fresh spinach, chopped and steamed
2 cups mashed potatoes
1/2 cup feta cheese
1/4 teaspoon fresh mint, minced
1 egg, beaten
2 tablespoons cream
Combine mashed potatoes and spinach; add feta
cheese, minced mint, salt and pepper to taste. Combine 1 beaten egg
with 2 T cream; add to spinach mixture. Butter inside of 4 timbales
or custard cups. Force the mixture into the timbales and bake in 400
degree oven for 20 minutes or until lightly brown on the top and sides.
Remove from the oven; invert on a warm plate.
