Sauteed Turnip Greens
Choose greens with no signs of wilting.
1 1/2 pounds of turnip greens
1 garlic clove, minced
4 strips of bacon
1/2 cup scallions, thinly sliced

Wash and dry greens; slice across leaves in rough julienne style. Fry 4 strips of bacon in a large skillet that has a fitted top.
Remove bacon and set aside. Add garlic to hot bacon drippings; sauté for a moment and add greens; stir quickly for one minute ,reduce heat, cover and cook for about 2 minutes of to desired doneness. Crumble bacon and sprinkle over greens along with scallions.
Sauteed cubed turnips are good to add too.
