Sautéed Patty Pan Squash
8 patty pan squash about the size of a golf ball
2 tablespoons olive oil
Slice squash in half, put oil in sauté
pan and heat to medium high, add squash and stir to coat, sprinkle with
kosher salt, reduce heat and cook stirring occasionally until tender
and golden brown, about 20 minutes. Serve immediately.
