Sauteed Cabbage and Onions
1 medium cabbage, thinly sliced
1 large onion, thinly sliced
1 tablespoon vegetable oil
1 tablespoon butter
1 tablespoon sugar
1 tablespoon vinegar
1 jalapeno, chopped (optional)
Salt and Pepper

Heat oil and butter in a large sauté pan. Place cabbage and onions (and jalapeno) in pan and stir to coat with oil. Stir to sauté quickly leaving vegetables el dente. After 5 minutes, sprinkle sugar over all, after 2 more minutes add vinegar and toss to blend flavors. Salt and pepper to taste. Serve immediately.
