Roasted Vidalia Onions and Potatoes
4 medium potatoes, peeled and cut in half
4 medium vidalia onions, peeled, cut into 8 wedges
Olive oil flavored cooking spray
Chopped dill
Salt and fresh ground pepper
1 tablespoon balsamic vinegar
Preheat oven to 350 degrees. Arrange potatoes and onions on baking sheet and spray with cooking spray. Sprinkle with salt and pepper and bake about an hour, turning every 20 minutes.
