Potatoes Au Gratin
4 baking potatoes, thinly sliced and not washed after slicing (the starch is needed to bind the dish)
1 medium onion, minced
1 cup cream
1/2 cup milk
nutmeg, freshly grated
Salt and fresh ground pepper
3/4 cup Parmesan cheese
Place potatoes and onions in 1-1/2 quart well buttered oven proof dish. Combine cream, milk, nutmeg, salt and pepper; pour over potatoes; sprinkle top with cheese. Bake for 30 minutes at 400; reduce temperature to 350 and bake 30 more minutes until creamy. Cool 5 minutes before serving.
THIS DISH TRAVELS WELL. AS DOES THE MEAT LOAF.
Any potatoes remaining are tasty warmed for a breakfast or a quick supper with a sausage or poached egg.
