Potato Cakes

3 cups mashed potatoes (prepared for a another meal)
1 egg
salt and pepper
2 tablespoons butter
fresh herbs, optional

Beat the egg with salt and pepper, thoroughly combine with potatoes. Form into cakes about 3 inches in diameter and brown in butter until golden on each side and warm through. Turn cakes only once for best results.
