Okra/Tomato
Sauce
4 cups tomatoes, peeled and chopped, drained, juice reserved
1 large onion, chopped
1 large bell pepper, chopped
3 tablespoons olive oil
1 cup okra, thinly sliced
In a large skillet, saute onions and
peppers until soft, add tomatoes; cook until soft, increase heat and
add okra; add tomato juice and boil rapidly about 3 minutes until okra
is al dente. Do not overcook. When prepared quickly in this method,
the sauce will not have a slimy
