New Potatoes in Mint Butter
16 tiny new potatoes, scrubbed
3 tablespoons butter
2 tablespoons fresh mint, chopped
Salt and white pepper
Cook potatoes in enough water to cover, add salt and boil for 15 minutes. Drain and pierce each potato. Melt butter with fresh mint; pour over hot potatoes; add salt and pepper. Cover and keep warm until serving.
