Horseradish Potatoes
Leftovers make wonderful potato cakes so its
okay to cook enough to have some left over.
6 medium large all purpose potatoes cut into chunks
6 tablespoons butter
½ cup half and half
1 teaspoon salt
2 tablespoons horseradish, freshly grated
Boil potatoes until tender and drain. With an
electric hand mixer, beat potatoes at medium speed until fluffy, add
butter and seasonings.
