Homemade Sweet Pickle (quick and easy)
4 quarts medium pickling cucumbers, thinly sliced
8 medium onions, thinly sliced
1/3 cup pickling salt
Cracked ice
4 cups sugar
3 cups apple cider vinegar
3 tablespoons pickling spice
2 ounces fresh ginger, peeled and thinly sliced

Combine cucumbers, onions, pickling salt; add 2 inches cracked ice and refrigerate for 3 or 4 hours. In a large non-reactive kettle combine sugar, vinegar, spices and ginger. Heat to boiling. Drain pickles add to pot and return to boil. Boil, 2 minutes. Pack into sterilized jars leaving 1/2 inch head room. Apply lids and rings. Process in boiling water for 10 minutes. Makes 14 half pints. Some people put spices in cloth bag. I leave mine in the liquid and put it into the far with the pickle.
