Bacon drippings may be used for these potatoes, particularly good for breakfast. Ham stock or vegetable stock may be used instead of water. Hot sauce may be added to the liquid if desired. Serves 4, if quantity is increased, increase the size of the pan. Not recommended for dieters.

4 medium to large all purpose potatoes, one inch dice
1 large onion, diced
3 tablespoons vegetable oil
¼ cup water

Heat 10 inch skillet, add oil; when oil begins to smoke add potatoes and onions and stir to sear on all sides. Add ¼ cup water, reduce heat and cover. Cook gently for 5 minutes, remove cover and allow potatoes and onions to brown slowly, turning with spatula every five minutes for about 20 minutes. Salt and pepper lightly several times throughout the cooking process.
