Haystack Potatoes
4 large russet potatoes, cut into match stick size
5 cups vegetable oil
Seasoning salt to taste

Peel and cut potatoes into match stick size and place in large bowl of chilled water. Remove potatoes, about 1 potato at a time and dry in a tea towel. Hat oil to 375 degrees and fry potatoes until lightly brown. Remove to paper towel lined dish and keep warm. Repeat process until all potatoes are fried being sure to let the temperature of the oil come back to 375degrees before more potatoes are added. Now once again add potatoes to the oil at 375 degrees and cook them until toasty brown. As the twice fried potatoes come out to the pan, season with your favorite salt to taste.
