Green Beans with Fresh Scallions
2 pounds green beans, trimmed
2 strips bacon
1 teaspoon salt
1/4 cup water
Trim and wash green beans. Render fat from
2 pieces of bacon in the bottom of a pressure cooker. Place beans on
top of bacon and renderings, add salt and stir to combine. Close cooker
according to manufacturers instructions and cook beans for 2 minutes
under pressure. Serve with thinly sliced fresh scallions.
