Glazed Carrots
4 cups carrots, ¾ inch slice
2 tablespoons water
4 tablespoons butter
2 tablespoons brown sugar
½ teaspoon fresh ginger, finely grated
1/8 teaspoon salt
Cook carrots in a medium heavy saucepan covered,
over very low heat with a minimum amount of water, salt and ginger for
10 minutes. Add sugar and butter and continue to cook, uncovered, for
10 minutes or until all liquid is evaporated and carrots are just fork
tender and glazed with sugar and butter.
