Fresh Vegetable
Kebabs
1 each, green, yellow and red bell peppers, cut into chunks
1 red onions peeled and cut into chunks
8 large craminni mushrooms or 2 portabello mushrooms
2 small tender yellow squash
Cut vegetables into similar size pieces;
toss in marinade of one part lemon juice and 2 parts oil. Add some fresh
herbs if you like (thyme or marjoram is good).
Thread onto 8 inch skewers, alternating colors. Brush again with marinade
and sprinkle liberally with kosher salt and fresh cracked black pepper.
Place on a hot grill, turning and basting frequently for about 15 minutes.
Serve on skewers on a large platter.
