Fresh Vegetable Tray with Dill Dip
This meddle can be made of vegetables of your choosing, provided you use fresh vegetables in season and a variety of color. Arrange kale of leaf lettuce leaves on a large tray and arrange vegetables to cover the greens.
Baby yellow squash, cut in half lenghthwise
Red bell pepper, cut in rings
Whole radishes
Baby bok choy, lightly steamed
Baby carrots, lightly steamed or fresh carrot strips
Cauliflower pieces
Broccoli pieces
Celery sticks
Cherry tomatoes

Dill Dip:
2 cups small curd cottage cheese
½ cup yogurt
1 tablespoon mayonnaise
Salt and freshly ground pepper
2 tablespoons fresh mint, minced
2 tablespoons onion, grated

Combine all ingredients and refrigerate for several hours
