Fresh Garden Peas
These are my favorite vegetables, but only when very young and tender, before they begin to turn to starch in the pod.
4 cups fresh green peas, shelled
2 cups iceberg lettuce, shredded
3 green onions, sliced
½ cup water
3 tablespoons butter
salt and pepper to taste

Place lettuce in a medium sauce pan, add peas, then onions. Pour in water and add butter and salt. Simmer peas covered until they are just done, about 4 minutes. Keep warm until serving time.
