Fresh Butterbeans
My favorite, can hardly find them any more.
1 quart butterbeans, freshly shelled
water to cover4 tablespoons butter
Salt to taste
Cover beans in cold water in a 3 quart sauce
pan. Bring slowly to a boil, reduce heat and simmer 20 minutes covered,
add butter and partially cover for 15 minutes. Beans should be tender.
Salt to taste only when beans are done, otherwise the skins may be tough.
