FAVA BEANS

1 pound dry fava beans, soaked
1 tablespoon olive oil
1/2 cup onions, chopped
1/4 cup green bell pepper, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon garlic, chopped
1 1/2 teaspoons red pepper flakes
2 cups tomato sauce
4 cups water
Salt and Pepper to taste
Drain beans and rinse cold In a large sauce pan or soup pot, cover beans with cold water. Bring to the boil; reduce heat and simmer until tender, about 1 1/2 hours. Skim foam from surface and add water, if needed. Remove from heat and allow beans to cool in their liquid.
In a large skillet heat oil over medium heat saute onion and bell pepper. Add parsley, garlic, red pepper flakes and drained fava beans. Cook minute; add tomato sauce and water; bring to a boil, cover, reduce heat and simmer for about 15 minutes to combine the flavors. Serve a cup for first course or with hearty crusty bread and a salad for meatless meal.
Yield: 4 to 6 servings
