Cornmeal Crusted Fried Okra
12 small fresh okra pods
1/2 cup yellow cornmeal
1/2 cup flour
1/4 teaspoon salt
Dash of cayenne
2 cups vegetable oil
Chill okra at least 30 minutes. Slice in rounds
about 1/2 inch thick. Combine cornmeal, flour, salt and cayenne. Heat
oil to 350. Put okra in a bowl with dry ingredients and toss. Shake
off access dry ingredients and drop into hot oil. Cook until golden
brown. Drain on paper towel and serve immediately.
