Caramelized Vidalias
I keep caremelized onions in the fridge all the time. Made in the slow cooker they are no trouble to make and are wonderful added to many dishes or served over rice or pasta with a salad for a delicious vegetarian meal.
5 pounds vidalia onions slice thinly
1 stick butter

Peal and slice onions, place in a slow cooker and cover. Cook on low setting for 15 hours until onions are deep brown and very soft.
Once these are cooled they should be stored in a glass jar with the juice and butter sealing the juices on top. The butter may be removed and used for another purpose of discarded, if you prefer.
