Baby Beets with Greens
This dish is a special treat early in the growing season when beets are among the first things to come from the garden. Treat them delicately and season sparingly to allow the wonderful delicate flavor through.
Prepare extra beets and use in a salad for another meal

1 pound baby beets
choose smallest fresh beets in variety of colors with green tops
1 tablespoon salted butter
Salt and freshly ground pepper

Scrub beets gently with a brush, do not peel or cut the root stem. Trim tops and reserve. Boil beet a few minutes in salted water just until tender. Drain, peel if necessary and keep warm while cooking young beet greens. Melt 1 tablespoon salted butter in a skillet, add greens, washed and chopped to skillet and cook quickly, season with salt and pepper to taste.
