Savory Harvest Bisque
For tailgate, serves 12-15
4 pounds butternut squash, peeled and cubed
10 cups chicken stock
2 tart apples, peeled and quartered
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1/8 cup brown sugar
8 ounces crushed tomatoes, drained
1/8 cup fresh lemon juice
1 cup cream
Simmer squash and apples in stock, uncovered
until tende; drain and preserve liquid; puree apples and squash; return
to the pan and add tomatoes, lemon juice; simmer 3 minutes; add cream
and return to the simmer.
