Savory Goat Cheese Cheesecake
2 cups ritz cracker crumbs
1/4 cup soft butter
dash of cayenne
2 eggs, well beaten
6 ounces chevre (soft goat cheese)
6 ounces soft cream cheese
1 teaspoon lemon juice
1/4 teaspoon garlic paste
1/2 teaspoon salt
1/2 cup caramelized onions or olive spread or dried tomato puree

Using a food processor grind crackers along with dash of cayenne; stir in butter and press into a spring mold pan 2 1/2x 9 inches. Preheat oven to 325.
In the food processor combine cream cheese and chevre, when creamed add eggs, lemon, garlic and salt. Pour half into cracker lined pan; add filling of your choice and remaining batter. Bake for 40 minutes, remove from oven and allow to cool at room temperature. Refrigerate for 6 to 12 hours before serving.
