Crostini with Roasted Tomatoes
Roasted Tomatoes
This recipe requires a lot of oven time. I usually do it over night.
Olive Oil
Salt
Pepper

Slice enough tomatoes 3/4 inch thick to fill a large baking sheet 2 (about 4 large tomatoes) Place sliced tomatoes on lightly oiled baking sheet and sprinkle liberally with salt and pepper. Place in 270 degree oven for 4 to 6 hours, it may take longer to evaporate all the juices and concentrate the flavors. These tomatoes are great in pasta, omlets, salads or as an hors d'oeuvre served on crostini.
