Fresh Chopped Pasta Sauce
2 cups tomatoes, peeled and diced
1/2 cup each of the following vegetables, peeled and chopped:
Red onion
Celery
Carrot
Bell pepper
Cucumber
Zucchini
10 basil leaves
1/2 cup extra virgin olive oil
4 tablespoons wine vinegar
Kosher salt and fresh ground pepper to taste
Parmesan Cheese
Marinate vegetables while 8-10 ounces angel hair pasta cooks. Serve vegetables over pasta topped with fresh grated Parmesan Cheese.
