Caribbean Curry Sauce
This is a wonderful cooking sauce. You can marinate or baste meats for sautéing, grilling, broiling or baking. Dribbled over stir-fried vegetables, it makes a great dish to eat over rice.

½ cup vegetable oil
4 tablespoons tamari paste
3 tablespoons brown sugar
2 tablespoons tomato sauce
4 cloves garlic, crushed
1 tablespoons fresh parsley, finely chopped
1 tablespoon coriander
1 tablespoon cumin
1 tablespoon Jamaican pimento (allspice)
1 tablespoon ground ginger
1 tablespoon whole cayenne, crushed
1 teaspoon habanero chili, minced
salt to taste
black pepper corns, cracked
1 teaspoon crushed red chilies

Grind all spices in spice grinder; then combine all ingredients.
