Sliced Chicken Sandwiches with Tarragon
Mayonnaise, Roasted Red Peppers and Provolone Cheese
1 tablespoon fresh tarragon, minced
8 tablespoons mayonnaise
8 slices country white bread
7 pieces grilled chicken, sliced
2 roasted red peppers, sliced
4 slices Provolone cheese
1cup arugula leaves
Mix tarragon with mayonnaise. Spread bread
with mayonnaise, add sliced chicken, peppers, cheese and arugula, salt
and pepper, top with bread and allow to rest 15 minutes before serving.
