One Eyed Ham and Swiss
2 slices white bread
1 tablespoon butter
1 slice of Swiss cheese
1 slice of ham
Place slice of ham and slice of cheese between two pieces of bread.
Spread soft butter on both outer sides of sandwich, using 1 teaspoon butter. With a biscuit cutter, cut a whole in the middle of the sandwich, about 2 1/2 inches round. Heat frying pan to moderately hot temperature, but not smoking.
Break egg into a small bowl or measuring cup.
Place sandwich in the pan and lightly brown on one side.
Before turning the sandwich, place 1/2 teaspoon butter in the hole.
When it bubbles, gently pour egg into hole.
Fry one minute and lift from pan.
Dash 1/2 teaspoon butter into the pan and turn the sandwich over.
Fry one minute or until the egg is cooked to your desire.
