Strawberry Mango Salsa
1 cup strawberries, sliced
½ ripe mango, chopped
¼ cup yellow bell pepper, diced
2 tablespoons lime juice
1 tablespoon chive, minced
2 tablespoons cilantro, chopped
1 tablespoon fresh jalapeno, minced
Dash of salt
Freshly ground pepper
1 teaspoon red wine or strawberry infused vinegar
1 tablespoon olive oil
Combine all ingredients and allow to macerate
for half-hour at room temperature.
Serve with toasted flour tortillas and goat cheese.
