Melon Salsa
2 teaspoons red onion, finely chopped
1/2 teaspoon garlic, minced
1-1/2 cup chopped melon (your choice)
1/2 teaspoon salt
1/8 teaspoon cayenne
2 tablespoons lime juice, 1 teaspoon olive oil
Run hot water over chopped onion to remove
any bitterness. Refresh in cold water and drain. Combine all ingredients
and allow to macerate in refrigerator before serving.
Mango may be added to or substituted
for melon.
Fresh jalapeno may be substituted for cayenne.
