Tabouleh Ham Salad
2 cups bulgar wheat
2 cups hot water
3 tablespoons tarragon vinegar
1 teaspoon tarragon, minced
1 teaspoon mint, minced
3 tablespoons extra virgin olive oil
3 tablespoons honey
2 teaspoons Dijon mustard
Salt and pepper
1 pound smoked ham or turkey, cut into cubes
½ cup sultanas
¼ cup chopped walnuts
Prepare 2 cups bulgar wheat by soaking in 2c hot
water; after 30 minutes, drain and squeeze out all water. Combine tarragon
and mint, tarragon vinegar, oil, honey, mustard, salt and pepper. Add
smoked ham or turkey, cut into cubes, sultanas, chopped walnuts. Allow
to macerate for 10 minutes. Serve on bed of lettuce.
