Spinach Salad with Winter Tomatoes
In the winter this salad is delicious made with canned tomatoes, better than those tasteless orbes you get from the grocery store. Turn this salad into a meal with the addition of some cold sliced meat and cheese and egg slices.
1/4 cup olive oil
1 teaspoon salt
1 1/2 teaspoon Worcestersire
1/8 teaspoon pepper
2 tablespoons mayonnaise
2 teaspoons herb vinegar or lemon juice
1 pound spinach, washed and dried
1 can small whole tomatoes, drained
1 cup salad croutons

Combine oil, salt and pepper, Worcestershire, mayonnaise and lemon juice to form a dressing. Tear spinach into bite-size pieces, slice canned tomatoes and add to spinach. Toss together in a large bowl and add dressing.
