Spinach Salad
NOTE: Wash and stem a pound of spinach while you're at it and you'll have spinach ready for a salad later.
4 cups of fresh spinach, stemmed and washed
Dressing
1/2 cup crème fraiche
1/2 cup light cream
3 tablespoons blue cheese
1 tablespoon vinegar
