Salad Nicoise (serves 4)
All you have to do for this meal is boil 2
eggs, chop green onions, wash the lettuce and assemble the rest.
4 cups romaine lettuce
1/2 pound green beans (cooked earlier in the week)
3/4 pound potatoes, boiled (cooked earlier in the week)
9 ounces canned white chunk tuna, drained
2 tomatoes
2 hard boiled eggs
1/2 cup pitted olives
1/4 cup chopped green onion
4 anchovy fillets
Arrange on romaine lettuce leaves
Dressing
1 clove garlic, ground to paste in 1/2 teaspoon salt
1/4 cup olive oil
1/4 cup vinegar
1 teaspoon sugar
1 tablespoon snipped fresh tarragon
1/8 teaspoon dry mustard
Fresh ground pepper
Combine all ingredients and pour over
salads just before serving.
