Potato Salad
Pick up potato or favorite salad from BRIX or Whole Foods Market or--
6 medium potatoes, peeled and boiled in lightly salted water
3/4 cup mayonnaise
1/4 cup sour cream
3 tablespoons sweet pickle vinegar
1 large vidalia onion, chopped
1 teaspoon fresh dill, minced
salt and pepper to taste
Combine mayonnaise, sour cream, vinegar,
and dill in a large bowl. Put hot drained potatoes in bowl and stir.
Some potatoes will break up and this adds a creamy consistency to salad.
Add onions, cover and refrigerate for several hours, until chilled.
