Melon/Berry Gazpacho
1 cup lemon juice
3 tablespoons lime juice
1 teaspoon rice wine vinegar
few drops hot sauce
1/2 teaspoon salt
2 cups chopped melon (your choice)
1 small cucumber, finely diced
1/4 cup red onion, minced
1/2 cup blueberries
Combine all ingredients and allow to
macerate for at least an hour. Serve in small bowls or tea cup garnished
with mint.
