Iceberg Lettuce Salad
1 head iceberg lettuce
6 tablespoons mayonnaise
2 tablespoons blue cheese
2 tablespoons pickle relish
2 tablespoons sweet onion, minced
Choose a very fresh head of iceberg lettuce
and taste to make sure it is sweet and not bitter. Should be a little
lightweight for its size and outer leaves bright and crisp. Remove core
and emerse in cold water. Set on tea towel to drain. Cut into large
wedges and dress with a mixture of the remaining ingredients or your
favorite creamy salad dressing.
