Ham and Potato Salad
4 large potatoes, boiled, peeled, one inch chunks (good to cook extra potatoes to have on hand for this salad)
1/3 cup olive oil
1/2 red onion, thinly sliced
1 cup ham, one inch chunks
Lettuce leaves
Cucumber Slices
Tomato Wedges

Boil extra potatoes at some meal, peel while hot, add olive oil while warm and refrigerate for making this salad. Add onion, and ham, toss to combine. Serve on lettuce, with sliced cucumber and tomato wedges.
