Grilled Chicken Salad
4 grilled chicken pieces cut into one inch pieces
NOTE: IF YOU USED THE RECIPE FOR GRILLED CHICKEN PROVIDED FOR THE 4TH OF JULY THIS SALAD WILL HAVE A VERY SPICY FLAVOR, OTHERWISE YOU WILL WANT TO BLEND SEASONINGS TO SUIT YOUR OWN TASTE.
IF YOU ARE COOKING FOR ONE OR TWO, THE NEXT TIME YOU GRILL CHICKEN, GRILL EXTRA PIECES AND TRY THIS RECIPE.

1/2 cup celery, chopped
1/4 cup red onion, minced
1/2 cup fruit (fresh mango, mandarin orange, grapes or apple) chopped
1/2 cup mayonnaise
1 teaspoon balsamic vinegar or soy sauce
1/8 cup fruit juice (lemon, lime or mango)
Salt and fresh ground pepper to taste (dash of cayenne, optional)
In a bowl combine meat, vegetables and fruit; combine other ingredients into a sauce and pour over all.
Serve immediately on a bed of mixed lettuce.
