Green Beans with Tomatoes and Feta Cheese
I often blanch beans for two meals at the same time, storing the remaining beans in a resealable plastic container, sometimes with a marinade, other times just plain. Great to add to salads for lunch or dinner or may be heated quickly in the microwave for a side dish.
1 pound green beans, trimmed
1 large tomato, peeled and diced
1/2 cup feta cheese
1/2 cup Paul Newman's Italian Dressing

Trim and blanch beans in boiling water about 5 minutes. Drain and marinate in Italian dressing. Just before serving, garnish with diced tomatoes and feta cheese.
