Greek Salad with Feta and Olives
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 tablespoon fresh oregano
1 tablespoon fresh mint, chopped
Salt and freshly ground pepper
2 hearts of romaine, torn into bite size pieces
16 cherry tomatoes, cut in half
1 cucumber, peeled and thinly sliced
3/4 cup feta cheese, crumbled
1/2 cup cured olives
In a large bowl, mix first 6 ingredients
with a whisk. Add vegetables just before serving and toss to combine.
Garnish with cheese and olives.
