Bib Lettuce with Peanut Vinaigrette
2 heads bib lettuce, washed and seperated
¼ cup dry roasted peanuts, ground
¼ cup peanut oil
3 tablespoons peanut butter
1 tablespoon rice wine vinegar

Kosher salt and freshly ground pepper
Wash lettuce and place in large bowl. Combine oil, peanut butter, vinegar, salt and pepper. When ready to serve, pour dressing over lettuce. Divide among 4 serving plates and garnish with ground roasted nuts.
