Beet Salad
6 beets, steamed, peeled, and sliced
Pour your favorite vinaigrette over them while still hot. Refrigerate to cool. May be made ahead. Keep some on hand.
Arrange beets on bed of spinach and garnish with toasted walnuts. Drizzle walnut vinaigrette over all.
Walnut Vinaigrette
1/2 cup walnut oil
1/4 cup raspberry vinegar
Salt and fresh ground pepper
