Barbecued Chicken Salad
6-8 pieces barbecued chicken, prepared earlier, and cut into bite size pieces
1 red bell pepper, minced
1 medium red onion, minced
1 jalapeno, minced
1 garlic clove, minced
1 cup pineapple cubes, drained
½ cup mayonnaise
¼ cup pineapple juice
½ teaspoon hot sauce
½ teaspoon salt

Combine Chicken, vegetables and pineapple. Combine mayonnaise with pineapple juice, salt and hot sauce. Arrange chicken on bed of baby greens and pour sauce over all.
